[ Recipe - Anzac Cookies ]

In honour of the members of ANZAC who fought at Gallipoli during World War 1, it's only appropriate to bake a batch of the finest ANZAC cookies and take a moment to remember those who have bravely served and are serving for our country.

This recipe is a special one, it has been passed down the generations and is a tried and tested family favourite, so we wanted to share it with you!  As the weather grows cooler, an Autumn afternoon is the perfect opportunity to stay in and fill your home with the smell of freshly baked cookies and these are just so simple to make!

[  Ingredients  ]

1 cup plain flour
1 cup rolled oats
3/4 cup desiccated coconut
3/4 cup brown sugar
1/4 cup castor sugar
125g butter
1 tablespoon golden syrup (I'll be honest, I was heavy handed with this!)
1 1/2 teaspoons bicarb. soda
2 tablespoons boiling water

[  Method  ]

• Preheat oven to approx 170C degrees (moderate/slow)
• Combine flour, oats, coconut & sugars in a large mixing bowl.
• Melt the butter & golden syrup.
• Separately, in a small dish dissolve the bicarb. soda in the boiling water.
• Add both wet mixes to the dry ingredients and combine.
• Place tablespoons of mixture onto greased baking tray.  Bake for 10-15 minutes until cookies are lighly golden brown.
• Cool on trays for a few minutes (biscuits will crisp when cool)

[ NB:  you could also try adding in a few white chocolate drops into the mixture for a delicious and indulgent treat! ]
